Virgilio Martinez grows his namesake coffee on his 10 acre farm - Finca Los Chorros - in Northern Guatemala. One of our smallest producers, Virgilio uses this to his advantage, constantly experimenting with different varieties of coffee and different methods of cultivation and post harvest processing. We noticed exceptional sweetness in this lot, and roast it a little bit darker than our lighter roasts to enhance and caramelize the natural sugars.
