Indonesian coffees - particularly coffees from Java and Sumatra - are intensely bodied and sweet at their best. Most of this is due to the unique wet-hulled processing they undergo. Basically, the coffee seed is quickly and completely separated from the many layers of the fruit around it, to aid in drying. This is done in Indonesia due to the regions very high humidity levels, where processing methods used in the rest of the world would result in an under-dried (or possibly moldy) bean. This lot of coffee from Northern Sumatra is one of the cleaner Mandheling coffees we’ve picked up over the years, more refined and sweet than earthy and herbal.
