This washed Ethiopian coffee comes from the Layo Taraga mill in the town of Haro Wachu in Guji, Ethiopia. To avoid confusion with our recently offered natural processed lot from the Layo Taraga mill, we have been calling this one after the town versus the mill. Regardless, both the natural and this washed lot have been very nice coffees. This coffee has a complex expression of lemon that is closer to lemongrass than citrus. If you’ve never tasted lemongrass, it’s not grassy but rather complex and herbal (we do grow a bit down here in Corpus Christi). This coffee makes an exceptional cold brew - perhaps the best we’ve made all year. Simply grind as you would for brewed coffee, then use a 1:15 ratio and a 24 hour soak in the fridge. There’s no need to filter if you don’t disturb the settled grinds - just pour off the top and enjoy!
