Finca Hondurita is a perfect fit for roastorium. This farm may be tiny at just over 15 acres (an acre is roughly 200 x 200 feet) but owner William Diaz produces great coffee! William carefully tends to Pacas, Pacamara, and Bourbon varietials of coffee, and we brought in a honey processed lot. Honey processing is somewhat of a combination of washed and natural processing, where the skin of the coffee cherry is separated on harvest but some of the flesh of the fruit is allowed to dry on the seed. This gives our Finca Hondurita a mellow, caramel-like sweetness and slightly lower acidity than our washed Ethiopia or super-bright Kenya.
